Hey guys! This banana and Coconut Cupcake recipe is one of my favourite cake recipes... There is just something so delicious about the way the banana and coconut complement each other.


175g Caster Sugar
200g Softened Butter
2 Eggs
1 tbs Vanilla
2 Mashed Bananas (I usually find that cakes taste better when they are a bit more ripe)
1 Cup Desiccated Coconut
200g Self-raising Flour

Buttercream Icing
150g Softened Butter
350g Icing Sugar
6 ts Full-fat Milk
1 tbs Vanilla

Cake Directions:

1. Hand mix the caster sugar and butter together until creamy
2. Add the first egg into the sugar and butter mixture. Then mix until fluffy
3. Then repeat step 2, until the mix is fluffy
4. Mix the mashed banana and desiccate coconut with the rest of the mixture
5. Add 1/2 of the self-raising flour into to the mixture and stir. After, do the same with the remainder of the flour
6. Scoop the cake mixture into the cupcake holders and put in the oven, which should be heated on gas mark 5
7. Leave in the oven for 25 minutes or util cakes are a light-brown colour

Buttercream Icing Directions:

1. Whisk the softened butter in a bowl for 5 minutes on a medium level
2. Add the first 1/3 of the icing to the butter and whisk on a low level until icing flour is no longer visible then whisk on a higher level for 5 minutes
3. Add 3 ts of full-fat milk
4. Repeat the 2nd step
5. Repeat the 3rd step
6. Repeat the 2nd step
7. Seal the bowl of buttercream icing with cling film foil and refrigerate for 45 minutes
8. Finally, decorate the cupcakes!!
