PAWN CURRY AND ROAST POTATOES

Apologies for not keeping you all updated.

It was my turn to cook on Tuesday and at the time this recipe was quite spontaneous because I did not actually know what I was cooking!

Serves: 4
Cooking time: 45 mins- 1 hour

Ingredients:
1 Onion
4 Cloves of Garlic
1 Big Pepper
1 Tomato
1 Tin of Chick Peas
1 Courgette
5 Medium Mushrooms
1 Pack of Pawns (Sainsbury's Basic)
1 Pack of Potatoes (Medium)
40ml of Vegetable Oil

Method:

1. As the potatoes take longer to cook and roast, I advise that you peel and boil the potatoes first
2. Whilst the potatoes are boiling, chop all of the ingredients except the pawns and chick peas and then place them in a frying pan
3. Drain the potatoes and place them in a tray and put them in the oven to roast (until they are crispy)
4. Put the oil in the frying pan - I find it useful to add a considerable amount of oil because it saves me adding more whilst everything is cooking
5. Put the pan on the fire and add salt (or what I use a Nigerian substitute - Magi), mixed herbs, black pepper, curry powder and turmeric
6. Leave it to cook for 5-10 minutes on a medium heat, although do not allow the ingredients to stick to the pan, by giving it the odd stir
7. Defrost the pawns in the microwave for 3 minutes, when done take them out and throw them in the pan
8. Leave to cook for 5-10 minutes, again with the odd stir
9. Add the chick peas
10.Leave to cook for 10-15 minutes with the odd stir and also add more herbs and salt to your liking
