IT'S BANANAS! B-A-N-A-N-A-S (SUITABLE FOR VEGETARIANS AND VEGANS)

Here is a quick and easy recipe. I would define this as a measureless recipe – the recipe does not require you to measure out ingredients for it to work. This is one of our family’s favourite recipes. Fritters are similar to pancakes and can be savoury or sweet, eaten as part of breakfast, lunch, dessert, or a quick snack.

Ingredients
180 g Plain Flour
60 g Sugar
2 Small or medium ripe Bananas (depending on the amount you want)
30 mL Cold water
6 Teaspoons of Vegetable or Olive oil (for frying)

Makes approx. 20 small Banana Fritter

1. To a bowl add the plain flour and sugar, then in a separate bowl mash the bananas.



2. Slowly combine the water to the flour and sugar and gently mix them together with a wooden spoon.

Note: If more flour or water is needed at this point then add some.


3. Next add the mashed bananas to the mixture and fold gently.

Note: At this stage the mixture should be slightly fluid similar to a pancake mixture, if not add more flour or water until it is consistent throughout.



4. To cook, heat two teaspoons of oil in a frying pan for 5 minutes, then use a ladle to spoon a small amount of the mixture into the pan.

Note: Once the pan has been heated, reduce the heat level of the fire.


5. Fry on each side for 2-3 minutes or until golden brown.


6. Finally enjoy!
